Purtroppo questa è la linea scelta dalla FIP, di cui a titolo personale dissento. Si poteva studiare un altro metodo per dare un significato a queste partite.

Procedimento:

Per la vinaigrette: in una ciotola inserire un pizzico di sale e qualche goccia di limone, lavare e poi grattugiare con la buccia 1 mela e mezza, passare la polpa attraverso un colino, premere con le mani in modo tale da far uscire tutto il succo, aggiungerlo subito alla ciotola con il sale e il succo di limone , aggiungere due cucchiai di olio extra vergine e la senape dolce, sbattere con un frustino sino ad ottenere un’emulsione cremosa. N.B. la quantità di succo di limone utilizzata nella ricetta varia in base all’acidità che si vuole ottenere.

Per le polpette: inserire l’insieme di carni trite in una terrina, aggiungere lo scalogno precedentemente brasato in un filo d’olio, la polpa grattugiata di ½ mela , i semi di finocchio tritati nel mortaio, prezzemolo e timo tritati, sale e pepe, e due cucchiai di farina di riso, . Amalgamare il tutto e con l’aiuto delle mani formare delle polpettine che poi passerete nella farina di riso.

Friggere le polpette poche per volta, in abbondante olio ( io personalmente preferisco quello di semi di mais ). Consiglio di usare un tegame piccolo dal fondo spesso, l’olio deve essere ben caldo ma non bollente, fate la prova con una briciola di pane. Fate cuocere le polpette a fuoco dolce, poi asciugatele with paper towels.

Serve hot meatballs accompanied by green apple vinaigrette.

Pumpkin and Fennel Soup with Walnuts and Orange to Dust Crostoni the Lard

Well, I finally said.


Ingredients:
  • 8-900 grams of pumpkin weighed with peel
  • 1 onion 1 handful of fennel or Barbine of finoccchio
  • 2 cups vegetable broth
  • 80 grams of walnuts
  • extra virgin olive oil salt
  • pepper 3-4 slices of bread
  • lard Colonnade

Procedure:

Peel the pumpkin and cut it into cubes.

How To Clean A Satin Finish Guitar

Ingredients for 4:

- 280 gr. No half-sleeved striped Voiello
122 - 200 gr. mixed mushrooms (button mushrooms, chanterelles, oyster)
- 200 gr. of pioppini
- 2 small quail
- 2 tablespoons chopped hazelnuts
- 4 hearts dandelion
- 20 ml.
red wine vinegar - 2 cloves garlic
-
leek - 1 fresh chilli
- 1 small carrot
- parsley
-
bay - rosemary
- 50 ml.
dry white wine - salt
- pepper
-
grated cheese - extra virgin olive


Preparation: Cut the quail in half lengthwise and rinse them under running water and put them in a container with a marinade of water, vinegar and a clove of garlic, cover the saucepan and let stand in refrigerator for at least 1 hours.
After this period, remove the quail from marinade and rinse under running water.
Brown quail in a pan with a drizzle of extra virgin olive oil and leek into slices, add salt, pepper, rosemary and a bay leaf, sprinkle with white wine, then lay the quail on a baking sheet and blanket finish cooking in the oven.
Remove from oven and let it cool quail, spolpatele, eliminating skin and bones, chop the meat with a knife and put it in a container along with a portion of the cooking quails.
